Fudge Chocolate Muffins

I baked these for my best friend in lockdown, she told me to keep it simple but keep it full of chocolate. So these made perfect sense to me. I wanted to try something a little different but pack them full of chocolate- so these are double chocolate with the added twist of fudge.

Ingredients-

  • 250g Plain Flour
  • 60g Cocoa Powder
  • 125g Golden Caster Sugar
  • 65g soft light brown sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 Eggs
  • 150g Milk (i used oat milk)
  • 1 tsp Vanilla Essence
  • 120g Butter
  • 130g Chocolate Chips
  • 100g Fudge

Method-

  1. Mix all the dry ingredients together, and create a well in the middle.
  2. Whisk the eggs, butter, milk, and vanilla together and then fold into the flour mix.
  3. add in the chocolate and fudge and then spoon into the muffin cases- bake at 180 degrees for 25 mins,
