Seafood Pasta

I’ve finally given into the craving, the time is here and now- and this massive bowl of pasta for four is going to be consumed by one, and im going to enjoy every last bit of it.

This seafood pasta has been over done to massive precautions and that is okay because it is great. Now I really like tomatoes, so when I created the pasta sauce I wanted it to be the freshest bloody sauce known to man, working with fresh and unprocessed stuff really makes everything better.

I was playing around a couple of months ago with pasta sauces, getting something full of flavour that doesn’t come out a jar, this is when I came up with the ultimate pasta tomato sauce. Full of yummy stuff and healthy goodness, it works so well with some seafood and pasta.

What you’ll need:

  • Small and Large tomatoes- lots
  • Garlic
  • Onion
  • Tomato paste
  • Mixed seafood
  • Spaghetti
  • Olive oil
  • Salt/ Pepper
  • Chilli Powder

Firstly you want to ger your pasta cooking, on a low heat add some salt and oil to the water before putting in the spaghetti. Leave to cook for about 10 mins, you want it cooked al dente.

Once the pasta is on, chop all the garlic and onions and tomatoes into small little slices, pop the garlic and onion in the pan with oil and let soften, once soft add all the tomato, add the paste and season, leave to cook until all the tomatoes have broken down making the sauce, this takes about 10 mins. Once its turned into the sauce, taste to see if you need to add any more tomato paste and salt and pepper, this is when you can add the chilli if you like.

Then add the seafood to the sauce and cook for another 7 mins- you don’t want the seafood under/ over cooked.

Once the pasta is cooked and drained add it to the bowl with the sauce, on the heat mix it together and check the flavour again, finish off with some parsley and enjoy!
