I believe that a good side of mac and cheese makes a meal. Almost every time I eat out, I try and get a side of magical mac and cheese. Okay if im eating Chinese I don’t get a side of mac and cheese ya know- within reason. Anyway, when I started doing this I quickly realised you could get really good and also really bad mac and cheese, and they are all so different.
The most in fashion thing at the moment in the culinary world minus scotch eggs is truffle and truffle oil- so a lot of mac and cheeses have truffle oil in. But im trying to make something that you can make at home that’s also super tasty and very much on the level of restaurant mac and cheese, so even when you are in your underwear on the sofa watching that new crime drama on Netflix you can enjoy some top notch grub.
Firstly set your oven to 180 degrees, then cook the pasta. Im a tad of a brat when it comes to the pasta in my mac and cheese, I think its obviously because im half Italian (duh).
I like to use the nice little macaroni things and look cute, but also its important these aren’t over or under cooked, there is nothing worse than over or under done pasta in a mac and cheese, and I’ve eaten a lot of the crap so trust me.
The only way to make sure this doesn’t happen is to test the pasta while you are cooking it with your mouth, I cooked my pasta for around 10 mins, but taste test it to what you like.
Once the pasta is cooked strain it and put it to the side. Then toast some bread and make it into bread crumbs, again pop it to the side.
Now time for the sauce, firstly get some butter and melt it in a pan, then add the milk and heat- I also added a couple of crushed cloves of garlic. Once its heated up a bit and let the garlic season the milk. Then drain the milk and butter back into a pan and add the flour- mix continuously until thick.
Then add the cheese and start stirring, now this is the most important part, you want to make sure it has the extra punch so you make this amazing dish. Its starts with the cheese, I used two different types of cheese. Cheddar and parmesan, and I used a lot. Then I seasoned it with a little cayenne pepper, black pepper and a little salt. I then added in some chopped up jalapenos just to add something a little different. Then pop the pasta in, mix it all up and place into a tin for cooking. Finish off with the breadcrumbs mixed with more grated cheese and some more seasoning. Then pop into the oven and bake until golden brown.
What you need:
- 500g Cheddar
- 200g Parmesan
- Cayenne Pepper, Black Pepper and salt
- 3 table spoons of flour
- 300ml of milk
