I remember the first time I wanted to make cauliflower cheese, i’d decided I was going to make it different- go against the crowd and do something “cool” this was a massive mistake, and my family are golden for finishing it, even smiling and saying it was nice… needless to say it was not.
I just picked the cauliflower off the bush thing, put it in the bowl and covered it in cheese- which when you think about it make sense, I was 16 never cooked anything but cakes and thought the 2 ingredients you’d need for cauliflower cheese, was well cauliflower and cheese… oh how wrong I was!
Because now I have the cauliflower cheese of dreams, like I actually dream of this stuff and I really didn’t used to like it at all. A lot of the things I make now i never used to like. I just remember it being so bland and boring, but I recently was lucky enough to have the Sunday lunch at Cora Pearl, they served up a great cauliflower cheese with truffle and it was great, so it inspired me that not all cauliflower cheese is bland and boring. I wanted to make it a little different, not the same bland boring stuff, but also something that was my own.
What I used:
- Cauliflower (obv)
- 250g Cheddar Cheese
- 150g Stilton
- 300ml Milk
- 3 Tbsp Flour
- 2 Garlic Cloves
- Truffle oil
I firstly prepped the cauliflower, the put the butter in the pan until it melted, then added the milk until that was warm with the garlic cloves, whisked in the flour and stirred until it thicken, I added all the cheese into the pan and stir until its melted in and smooth, season with salt and pepper and add the truffle oil if you’d like to at this point, pour it evenly over the cauliflower. Make sure its as level as possible and then add the seasoned breadcrumbs on top. Pop in the oven for 25-35 mins at 170 degrees in a fan oven.
