We’ve all heard the old wife’s tail, eat carrots and you can see in the dark. When in reality if you eat too many carrots, you’ll just turn slightly orange- I guess then you wont have to wear fake tan… pros and cons then.
These are a super simple and different way to do your carrots for a roast or any meal. Since I started roasting my carrots a few years ago I won’t eat them any other way. They retain so much more flavor than if you boil them and are quicker and better for you.
Roast your carrots in Olive oil, thyme leaves, a little lemon juice and zest and salt.
