Parma wrapped Chicken.

Parma Ham Chicken:

Everyone loves chicken, I mean literally everyone. It’s a go to thing for most people, its easy to cook as well as being a pretty healthy. Although, I feel like you can get into a pretty boring routine so something like the Parma ham wrapped chicken mixes it up a bit. I served this with fried half onions and roasted chestnuts- and a side of buttered new potatoes (going to be in a blog soon). I haven’t used roasted chestnuts for a dish before, I used to eat them like grapes all the time- they have a really nice texture as well as this wintery warm flavor- if that can be a flavor.

Ingredients;

  • 2 chicken breasts
  • 4 slices of Parma ham
  • Chestnuts (pealed)
  • 1 white onion
  • Cayenne pepper
  • Butter
  • Chives
  • New potatoes

Cooking time 30 mins.

To start season the chicken with salt and pepper, you can also add some cayenne pepper for a bit of a kick. Using two slices of Parma ham wrap the chicken all the way round so that it’s round, and put it in the oven for 15 mins- you want to make sure the chicken is cooked through as well not over cooking it. Cut the white onion in half and place on a pan that is already covered in melted butter and fry face down- the butter brings out the sweetness in the onion and not over cooking means it’s still has a crunch, half way through the cooking of the chicken take it out and pop the chestnuts into the pan with it so they cook for about 7 mins. This dish is really simple and easy to do as well as adding a different spin on a normal chicken dish.

For a side of new potatoes, boil the potatoes until soft and drain. Get a large chunk of butter and put it in the pan, until melted- the aim for the butter is to go brown so its slightly burnt (beurre noisette)- this gives the butter this nutty taste and really adds something to the potatoes. Add the potatoes and season with parsley and salt. Once the have browned on the side they are ready to be served with the chicken. Even though this is a easy and quite dish it has lots of flavors so I hope you enjoy.
