Fruity Salmon.

When I was younger my nickname was “Fruit Batt” if there was fruit to eat I would inhale it, and things haven’t actually changed that much as I’ve got older I’m still obsessed with fruit and I really enjoy adding it to savory dishes to add something a bit different, salmon is one of those fish that goes with most things- you can serve it with potato’s or salad or in this case fruit salad! This is a small dish and so I will be posting a separate blog with a couple of sides that could go with this. This fruity salmon salad is perfect for lunch and only takes 10-15 mins to make. I paired the salmon with peaches, which I’ve never tried before, as well as a pomegranate and pine nut salad. This was more an experimental dish and I didn’t know how it would turn out- but I really enjoyed eating this and will defiantly be making it again.

Ingredients:

  • Salmon
  • 2 tablespoons Honey
  • 3 tablespoons Soy Sauce
  • Pomegranate
  • Pine Nuts
  • Rocket (salt, olive oil, balsamic vinegar)
  • Peaches

My go to way for cooking salmon is covering it in honey and soy sauce, and for a salad like this its ideal- keeps the salmon moist (I’m sorry) and flaky as well and sweet and slightly salty. So, I started by doing this and letting the fish marinate, then pop it in the oven for 10 mins with a slice of lemon on top. While its cooking get the salad leaves ready- I used rocket for this as rocket is known to have a peppery taste, wash/ put in bowl. I then use a little olive oil, salt and balsamic vinegar and mix it into the leaves. Then add the pomegranate seeds and pine nuts. Then cut the peach in to slices- and use a grill to cook them slightly, you don’t want to over cook them because they will get mushy, it works so much better when the peach is just slightly cooked on the outside but has some crunch in the middle. By the time this is all done your salmon will be finished and you can start plating, put the salad first and then the salmon on top and finish it off with a couple of slices of peach and sprinkle with some pomegranate seeds, I also used a couple of tomatoes.

This is a super simple dish that also has lots of different flavors, its healthy and quick and I really hope you enjoy it.
